Most packaged chivda is a crowd — sev, boondi, corn flakes, dal, peanuts, a masala blend and a colour to hold it all together. Roasted Poha Chivda is the opposite. Thin flattened rice, slowly roasted in a heavy pan until every flake goes dry and papery, then tempered with a spoon of kachi ghani mustard oil, sliced onion, green chilli and curry leaf. That is the whole thing.

It is what gets made on an ordinary evening in a Bihari kitchen when someone wants something with their tea and nobody wants to deep-fry. Six ingredients, and you can name every one of them before you read the back of the pack.

The result is light rather than rich, savoury rather than spicy, and it does not leave your fingers oily. If you have been looking for a chivda you can eat a bowl of without feeling like you have eaten a meal, this is the one.

Pan-roasted, not deep-fried

The poha is dry-roasted slowly over low heat until it snaps. Nothing is submerged in oil at any stage. That is what keeps this at 8.1 g of fat per 100 g rather than the twenty-plus you will find on most namkeen packs.

Mustard oil as tempering, not as a bath

Kachi ghani mustard oil goes in at the end as a chhaunk — a spoon, not a bath. It carries the onion, chilli and curry leaf through the mix and gives the sharp, warm finish that palm oil never can.

What is roasted poha chivda?

It is a savoury Indian namkeen made from flattened rice — called poha, chura or chiwda depending on where you are from — dry-roasted in a pan and tempered with onion, green chilli and curry leaf. It is the simplest form of chivda there is, and the version most Bihari and Maharashtrian homes actually make.

Is it genuinely roasted, or fried like most “roasted” namkeen?

Genuinely roasted. The poha is dry-roasted in a heavy pan and never submerged in oil. The mustard oil goes in at the end as tempering and works out to 7% of the mix, which is why the total fat is 8.1 g per 100 g. You can check that figure against any other namkeen pack you have in the house.

Does it contain peanuts?

There are no peanuts in the recipe — the only six ingredients are listed above. However, it is made in a kitchen that also handles groundnut, tree nuts, sesame and gluten-containing cereals, so we cannot describe it as peanut-free and it is not suitable for anyone with a peanut or nut allergy. If you simply prefer chivda without peanuts in it, this is the one.

How does it compare with your Chura Chivda?

Chura Chivda is the loaded version — poha plus corn flakes and 14% groundnuts, crisped in oil, richer and heavier. This one is pure poha, pan-roasted, six ingredients, and about a third of the fat. Most people who buy both keep this as the everyday bowl and the other for when guests come.

How spicy is it?

Mild. Fresh green chilli at 1.5% and nothing else — no chilli powder, no masala blend. There is warmth, not heat.

Which size should I order?

200 g if you are trying us for the first time. 400 g is our most ordered size and covers a household. 800 g is the best value per gram and the right call if you already know you like it.

How long does it stay crisp?

About a week once opened, if you reseal the zip-lock properly and keep it away from moisture. Unopened, it is best before 3 months from the manufacturing date on the pack. There are no preservatives holding it together, which is why the window is honest rather than generous.
