Description

In Bihar we call it pedakiya. Most of India says gujiya. Either way it is the sweet that appears when something is being celebrated — a thin maida shell folded around khoya, sugar, cardamom and dry fruit, crimped shut along the curve by hand, and fried until the surface blisters.

Ours is made in small batches in our kitchen in Raipur, with fresh khoya, pure desi ghee and four dry fruits in every piece. Nothing is added to make it keep. It is made close to the day it ships, and it is meant to be eaten soon after it arrives.

Generously stuffed

A gujiya is only as good as what is inside it, and this is where most of them are cut. The cheap ones are mostly semolina with a little sugar — sooji bulks out the filling and costs almost nothing.

Ours is built on khoya at 20% of the whole sweet, with almond, cashew, pistachio and raisin folded through it and green cardamom ground in. Semolina is in there at 8%, doing what it should — giving the filling body — rather than standing in for the khoya.

The shell is rolled thin and crimped by hand along every curve, which is why the edge on each piece looks slightly different from the next.

It keeps 15 days, and that is the point

Gujiya made with fresh khoya and no preservatives has a best-before of 15 days from the day it is made. Once you open the box, transfer it to an airtight container and finish it within about 3 days.

That is short, and we would rather say so plainly than surprise you. A khoya sweet that claims two or three months on the shelf has something in it that we do not put in ours.

So: order it for a date, not for the cupboard. We make and dispatch within 24 to 48 hours of your order, and most addresses receive delivery in 3 to 7 days. If you are ordering for a festival, give it a week’s head start. If you are on a route that takes longer than that, write to us before you order and we will tell you honestly whether it will reach you in good condition.

Perfect with your evening chai

Serve at room temperature as it comes, or warm a piece for about twenty seconds — the shell crisps up again and the khoya softens, which is close to how it tastes an hour out of the pan.

  • With evening chai. One piece, one cup. This is what it was made for.
  • At breakfast. Not conventional, entirely defensible.
  • After dinner. A single piece instead of a dessert.
  • On a thali when someone visits. It is the sweet people recognise as an occasion.
