Savita Kitchen’s Chura Chivda is made the way Savita Devi has made it for thirty years: flattened rice and corn flakes crisped in mustard oil, hand-sorted groundnuts, onion, turmeric and a little red chilli. Mustard oil is what gives Bihari chivda its sharp, warm finish. It costs several times more than the palm oil most packaged namkeen is made in — and it is the single biggest reason this tastes like home rather than like a factory.
Hand-sorted groundnuts
Every peanut is picked over by hand before it goes in, so you get whole, red-skinned groundnuts through the pouch instead of split halves and dust at the bottom.
